PARMENTIER (Antoine-Augustin) and Nicolas DÉYEUX. Précis d'e - Lot 65
PARMENTIER (Antoine-Augustin) and Nicolas DÉYEUX. Précis d'expériences et observations sur les différentes espèces de lait, considérées dans leur rapport avec la chimie, la médecine et l'économie rurale. Strasbourg, F.-G. Levrault, Théoph. Barrois, year 7 (1799). In-8, half brown basane, ornate spine, black title page, red speckled edges (19th century binding). False title, title, iii ff. 420 pp. and (2) ff. of table. Rare single edition of this complete treatise on milk. This work, which escaped the majority of gastronomic bibliographies, is the development of a memoir published in 1788, the subject of which was the comparison of the milks of women, cows, goats, donkeys, ewes and mares. Divided into three parts, the treatise deals with the chemical properties of milk (including cream, coagulation and fermentation), moral and medicinal influences on milk and the use of milk as a medicine, and finally, milk in the economy (with an approach to dairies, trade, cheese-making and their different qualities). Nicolas Déyeux (1745-1837) was Napoleon I's pharmacist, the King's first pharmacist under the Restoration, and a member of the Académie des Sciences and the Académie de médecine; with Parmentier, he undertook other research, on blood and gallic acid for example, and contributed to the Bibliothèque physico-économique (1782-1797), a periodical that published numerous articles on gastronomy and oenology from 1782 to 1831. Some brown spots. Spine slightly faded.
