PUYMAURIN (A. de). Memoir on the applications in the domestic economy of gelatin extracted from bones by means of steam. Paris, Madame Huzard, 1829. Brochure in-8, untrimmed, green paper cover. 81 pp., 3 folding plates (sections and details of the gelatin extraction machine). First edition of this memoir defending the application of the process developed by Joseph d'Arcet (1777-1844), who employed acid and developed the use of steam to extract gelatin from bones, explained in his "Recherches sur les substances nutritives que renferent les os" (161 pp.). Since Papin's research at the end of the 18th century, people have been trying to facilitate the extraction of gelatin from bones for use as a food substance. The gelatin extracted from the bones added to food increases its nutritive principles and thus saves money. "This new process offers to mankind a healthy food, of an easy preparation and which prevents any repugnance; it can provide to the domestic economy unknown and incalculable resources; it also offers to the charity the means of multiplying its helps" (p. 9). Minor foxing. Pale staining to the plates. Vicar, 718.
