MENAGIER DE PARIS (Le), a treatise on morality and domestic - Lot 387
MENAGIER DE PARIS (Le), a treatise on morality and domestic economy composed around 1393, by a Parisian bourgeois. Paris, Crapelet, 1846. 2 vols. large in-8, red morocco, double cold fillet, spine decorated with the same cold fillet, inner lace, gilt edges on marbling (Duru 1850). I) False-title, title, iii pp, (2) ff, lxxxviii pp, 240 pp. - II) False title, title, 382 pp. First edition of the most important cookbook of the French Middle Ages. It was prepared and annotated by Baron Jérôme Pichon, and published at the expense of the Société des bibliophiles françois, of which Baron Pichon was the president. It is a very complete treatise written by an anonymous, very old Parisian bourgeois, who addresses himself to his young wife, exhorting her to various moral precepts, and especially domestic ones concerning the management of a house, gardening, the choice of horses, hunting with hawks (with an engraved plate)... The kitchen and gastronomy in general occupy several chapters, especially in volume II, with very numerous recipes of the highest culinary interest: common soups, with spices, flesh binders, rost de chair, pâtés, fresh and sea fish, eggs, entremets, soups for the sick... According to Baron Pichon, the author was partly inspired by Taillevent's Viandier, and the Livre fort excellent de cuisine (Lyon, 1542); the part entitled Le Viandier is even more detailed than in Taillevent's work. Edition printed at 324 copies on Hollande paper. One of 24 copies on large imperial Hollande paper, reserved for the resident members of the society, this one printed for M. Leroux de Lincy. A very fine copy from the Robert Hoe library, with his bookplate (III, 1912, 2227). Volume II, the inserts on pp. 59-62 have been bound in fine, in which the raw words have been replaced by dotted lines. Slight rubbing. Vicaire, 583-587 - Bitting, 578 - Oberlé, Fastes, 50 - Thiébaud, 655 - Mennessier de La Lance, II, 185.
