GRIMOD DE LA REYNIÈRE (Alexandre-Balthazar-Laurent). Manuel - Lot 364
GRIMOD DE LA REYNIÈRE (Alexandre-Balthazar-Laurent). Manuel des Amphitryons. Paris, Capelle et Renand, 1808. 3 parts in one vol. in-8, half green basane, smooth spine decorated, speckled edges (Binding of the period). Faux-title, title, 384 pp. with frontispiece and 16 plates. Sought-after first edition of this famous treatise, inspired by the Almanach and the Journal des gourmands. Opening on a history of the table since the Ancien Régime, the manual is an update of the rules of good manners, intended for the new Amphitryons. Divided into three parts, it begins with a treatise on the art of cutting, whose illustrations are inspired by the famous Art de trancher la viande, published by Pierre Petit in the 17th century. Grimod de la Reynière considers that "one can compare an Amphitryon who does not know how to cut or serve, to the owner of a beautiful library, who cannot read. The one is almost as shameful as the other" (pp. 25-26). The second part, composed with the restaurant owner Alexis Balaine, describes the menus for 25, 40 or 60 places. The last part is a code of civility on the reception, the placement, the service, the remarks, the nutritive visits, the cost of the receptions... Binding rubbed, spine faded. Vicaire, 427 - Simon, 805 - Bitting, 203 - Oberlé, Fastes, 135 - Livres en bouche, 235.
